What is Nurungji Baesuk?

Nurungji Beasuk (누룽지 백숙) :

It is boiled chicken with rice which is often cooked in a pressure cooker. Baesuk (백숙) is a soup made with boiled chicken. A traditional Korean chicken dish made with a whole chicken, garlic, and scallion and not seasoned at all. Nurungji is rice that is scorched or slightly burnt.

It’s added to the Beasuk, so the rice at the bottom becomes scorched and the top half of the rice turns into a velvety porridge. The rice itself comes with a nutty flavor and enriches the soup with its taste.

What is Dakgangjeon?

Dakgangjeon(닭강정) :

It is crispy fried korean chicken dish that is glazed in a sweet and sticky sauce. The chicken used for this dish is boneless and in small, bite-sized pieces making it cook very fast.

The best dakgangjeon can be found in Korean street markets and is a big part of Korean culture. Fried chicken is often enjoyed with beer and shared with friends in a community meal.  The sauce for this traditional dish is made out of soy sauce, rice wine, cider, honey, and sugar, as well as garlic and ginger.

If you prefer your chicken spicy you can add gochujang, the Korean red chili pepper paste. If you rather enjoy it mildly you can partially or completely replace the chili paste with ketchup.

What is Dakgalbi?

Dakgalbi (닭갈비):

It is spicy stir-fried chicken with vegetables and tteokbokki, Korean rice cakes. Boneless chicken, tteokbokki, green cabbage, sweet potato, and other vegetables are added to a frying pan and cooked until tender.

The sauce for this dish is made out of gochugaru, Korean red pepper flakes, and gochujang, the red chili pepper paste, garlic, ginger, and other spices. If your rice cakes come pre-cooked all you have to do is soak them in water for ten minutes and then add them to the dish.

Dakgalbi is especially popular in Chuncheon (춘천), a city in Gangwon Province (강원도) where it originated in the 1960s. It can be ordered in nearly every restaurant there.
